A little-known gem in the hospitality industry is spreading its wings.
Thyme — tucked away in the Fritholme Garden Estate on Cataract Hill — held its first Happy Hour last Friday.
The regular event will occur every Friday from 5pm to 9pm.
Thyme is the collaboration of chefs Ian Carruthers, Simon Carruthers and Joe Gibbons, the restaurant and bar had a soft opening in the middle of April.

Ian has been a private chef for families in Tucker’s Town and owns Bermudaful Catering. Simon works for Gosling’s but has worked at the Hamilton Princess while Joe Gibbons has hosted his own cooking TV show as well as written a culinary column.
Ian told the Bermuda Sun the happy hour specials will include wine and beer as well as a tapas-style menu.
One of the highlights will be mini-sliders which will include a pulled pork slider, a Bermuda codfish slider and a mini burger.
Ian said: “We’re doing a trio to mix it up a bit.”
The eatery’s functionality has allowed it to host two small wedding receptions.
“It’s a great place to have a birthday, a party or a special evening.”
Beraslon spa is located below it, so it also provides a relaxing place for people who have just had a manicure or other treatment to sit and enjoy and just soak in the moment.
