Desire to return to traditional gourmet food inspired chef

Eliana's was introduced in August of last year by chef and managing director, Franz Egenolf.
Mr. Egenolf and his wife Shirley form the limited liability company that owns Eliana's, as well as the Pizza House Restaurants by which they are also known. In fact, Eliana's materialized from the underused space in the north section of the company's St. David's venue.
"I always wanted to do something different," Mr. Egenolf said. "... I'm a trained chef, and after doing 20 years of pizzas, I wanted to go back into the more traditional gourmet food."
He said: "We renovated. We stripped the whole area and redid everything from flooring to walls to furniture."
The new restaurant came nearer fruition. It just needed a name.
"We looked for some names on the Internet. Eliana is a Hebrew name, and it means 'God has answered.' It was just eye-catching... different."
And so they christened the restaurant Eliana's.
